Taco Soup by Chef Todd Leonard, CEC Prep time: 27 min Serves 9 Ingredients Instructions 2 tbsp. butter 2 tbsp. garlic, minced 2 c. THRIVE™ Ground Beef (FD) ½ c. THRIVE™ Chopped Onions (FD) 1½ c. THRIVE™ Instant Pinto Beans (FD) ½ c. THRIVE™ Sweet Corn (FD) 1 c. THRIVE™ Tomato Dices (FD) ½ c. THRIVE™ Green Chili Peppers (FD) 2 tsp. THRIVE™Chef's Choice Seasoning Blend ¼ c. THRIVE™Tomato Sauce, dry 2 tbsp. THRIVE™ Cilantro (FD) 1 tsp. THRIVE™ Beef Bouillon 2 tbsp. THRIVE™Tomato Powder ¼ tsp. THRIVE™Iodized Salt 2 tsp. chili powder (or as desired) 1½ tsp. cumin 8 c. water 2 tbsp. lime juice ¼ c. cilantro, chopped fresh 1 tbsp. Cholula hot sauce (optional) Sauté butter and garlic together in a large saucepan until lightly caramelized. Add all remaining ingredients except lime juice, fresh cilantro, and hot sauce. Bring soup to a medium simmer and cook for 10 minutes. Finish with lime juice, fresh cilantro, and hot sauce. Serving Ideas: Serve with sour cream, tortilla chips, tomatoes, and avocado for a tasty soup.
